It can be used for making traditional sushi rolls (maki sushi), while you can cut it in your preferred size for other sushi variations like temaki (hand rolls) and nigiri (hand-pressed sushi). To use it, you place a sheet of nori on a bamboo sushi rolling mat (makisu), spread a thin layer of sushi rice over it, add your choice of ingredients (such as fish, vegetables, and sauces), and then roll it tightly into a cylinder using the mat. The nori sheet holds the roll together and adds a distinct umami flavour. You can make the sushi as small, bite-sized rolls, usually with only one or two fillings. Another popular type is called temaki, or hand-roll. These are cones of nori seaweed wrapped around sushi rice and fillings. Another widespread use for nori is to wrap onigiri – triangular shaped ‘rice balls’ that are a typical takeaway snack in Japan. You can completely wrap an onigiri in nori or tear off one long strip to go around the outer edge. All nori sheets come with perforations to make this even more accessible. Try passing the roasted sheets over an open flame to crisp the seaweed and crumble it over noodle dishes and salads as a textured, sea-scented garnish. Sushi nori is a nutritious ingredient.
