I generally use a variety of good quality grass-fed and organic animal fats when cooking and try not to overdo it with butter as its hard to find a quality grass-fed source and the price does add up over time.
I have purchased Ossa Tallow previously and due to the quality of this product I decided to start switching up butter for Ghee and have not been disappointed. The Ghee is a deep yellow colour and has a fragrant taste and dense texture. I use just under a tablespoon when cooking eggs or frying meat etc and this product really holds up well and adds that buttery taste and texture without the additional lactose elements.
The added benefit of this product is that it lasts a lot longer than butter when kept in the fridge and the quality has not diminished over time. When used sparingly it also lasts in terms of quantity which justifies the difference in price compared to normal butter.
