Raclette is a very specific kind of cheese and gets its name from the French racler which means “to scrape.” Originally known as "roast cheese" that shepherds once ate sitting among their cows has not changed much since the Middle Ages. Today called "Raclette", it is still just as creamy and melting. It is a dish made to share in the warm ambiance of winter nights sitting by the fire, with family and friends.
